We are Summer Grilling with Uncle PhillipđŸ—â€

One of our favorite summer activities is dinner off the grill. Grilling can be just a weekend activity or something to enjoy during the week. No matter when you like to enjoy the grill, using your herbs and vegetables from your garden will make your food taste even better. 

We came up to visit my aunt and uncle over the weekend and he wanted to show us his favorite past time – grilling. 

With the summer heat, we don’t want to add any heat to our house by using the kitchen. Uncle Phillip took the boys outside and started up the grill. My aunt did the prepping in the kitchen with the pasta salad and the seasoning for the fish and vegetables. 

Uncle Phillip has a beautiful garden, so he used his vegetables right out the garden to make our dinner. We had hush puppies with fresh creamed corn, herb zucchini off the grill, and grilled Alaskan herb salmon from a recent fishing trip. 

During our trip we also had grilled BBQ chicken. The chicken was prepped and rubbed and was so tender and sweet, it just melted in your mouth. 

A little trick I learned while we were up there was to boil your chicken before you put it on the grill. I never thought of that! Maybe you have and are reading this saying “Girl has been living under a rock!” But really, I have never heard of it. 

Uncle Phillip boiled his chicken for about 15-20 minutes to get it almost done, then he took it out the water, put it on a platter and added more BBQ sauce. After they were good and coated with sauce, he took them out to the grill.  

Oh that chicken was amazing. It was so tender and juicy, grilled on the outside, but no dry on the inside.  PERFECT!! 

I asked if I could use his special spice in my current blog, and he was glad to share. Below is his Special Spice Recipe that he used on our chicken. 

Uncle Phillip’s Special Spice 

  • 1 tbsp + 1 tsp Coriander 
  • 1 tbsp Parsley 
  • 1/4 tsp Smoked Paprika 
  • 1 tbsp Garlic Powder 
  • 1 tbsp Onion Powder 
  • 1 tbsp Salt 
  • 1 tbsp Black Pepper 
  • 1 tbsp Cilantro 
  • Mix all these ingredients together and you will have some special seasonings for your chicken, pork, or vegetables. 

When you are making your own spices, you can use dried herbs from your favorite store, or you can use your own garden provided herbs. If you are using your garden herbs, that you have dried, please make sure they are fully dried before you use them.  

Also, if you don’t want to make this large of a container, you can make your own amount by cutting the recipe.
